Corn Salsa and other simple appetizers

Looking for a Corn Salsa recipe. I've made a corn/black bean with cilantro and fresh salsa for ages. Want a new take on it.

Maybe a second dip good with tortilla chips. For a casual bbq. Or really any easy, yummy appetizer.

    1. What about a fruit salsa to balance your usual, like a mango or a papaya salsa? Or perhaps just add some diced mango to your corn and black bean. I bet that would be great!

            1. This is a delicious corn salsa:

              2 ears grilled corn, cooled, and shucked
              approx. 12 cherry tomatoes, quartered (use more or less based on the color you want for finished product)
              2 jalepeno or serrano peppers, seeded and finely diced
              1 avocado, diced
              juice from 2 limes
              salt, to taste
              cilantro, chopped (approx. 1/2 cup or to taste)

              Combine all.

                    1. Basil Mango Shrimp Cocktails
                      1 lb spicy sauteed shrimp, chilled
                      1 Mango
                      12 leaves fresh Basil.

                      Peel & pit the mango and put the flesh in a blender with the basil. Whirrrrrr into a puree. Chill. Spoon into margarita glasses and hang shrimp on the rim. Or make "Shrimp Shooters" with a shotglass of puree and a single shrimp.
